For this chocolate cookies you need the following ingredients:
For the dough:
- 250g butter at room temperature
- 100g dark chocolate
- 120g sugar
- 80g cocoa powder
- 2 eggs
- 500g flour
For the filling:
- 1 can of caramelized sweetened condensed milk*
- 100g dark chocolate
First beat the budder with the sugar and cocao powder till completely combined. Add the melted chocolate and eggs and beat again. The last step for the dough is to add the flour. Let the dough rest for 1-2 hours in the fridge till you roll it out and cut out some star cookies*. Half of the cookies needs a little star cutout to see the filling later on.
While the cookies bake at 180°C on convection setting in the oven for about 15 min and cool down you can prepare the filling. Melt the chocolate and add the caramelized sweetened condensed milk (if you don't get that in store you can just by the regular one, and cook it for about 1h on the double boiler) till it caramelizes. Fill the lightly cooled down filling into a piping bag* and pip the lower side of the cookies (without hole) with the filling. The last step is to add the other side of the cookies and they are ready to enjoy.
